Preparations from chokeberry at home. Chokeberry jelly: a healthy dessert and a supply of vitamins for the winter

The rowan jelly impressed my husband so much that he ate half a jar of the delicacy with the loaf in one sitting. The stern man, according to him, liked the original astringency of the chokeberry in combination with sugar. He tried the savory dish for the first time in his life, but asked to prepare more delicious jam. And leave a couple of jars for him personally. If you want to make a splash in the family, prepare a bright, aromatic jelly from three ingredients: rowan, water and granulated sugar. You will not regret.

To make chokeberry jelly you will need:

  1. chokeberry - 800 g;
  2. sugar – 500 g;
  3. water – 1.5 l.

How to make chokeberry jelly - recipe step by step

  • We remove the rowan from the branches, remove the litter and leaves. We leave only the berries, which are washed well in several waters.

  • Then transfer the raw materials into a saucepan, fill with cold water and cook for 20 minutes after boiling.

  • Place the boiled berries in a colander to drain the liquid. You need to cook rowan to make it softer.

  • Pour the dried berries into a tall glass and puree with a blender.
  • Add sugar. Its amount can be increased or decreased depending on your love for sweets.
  • Place the puree with sugar in a saucepan with a thick bottom and place on the fire. Bring to a boil over medium heat and cook until thickened. Chokeberry contains a lot of pectin, it will begin to thicken quickly. At the same time, you should not move far from the stove so that the mass does not burn. It needs to be stirred every three minutes.
  • Turn off the heating under the finished jelly.
  • To prepare the jam for the winter, we transfer it into jars that have been sterilized in a convenient way. Roll up the boiled lids. You can close with nylon lids and store the workpiece in the refrigerator. But we didn’t store the first batch. We ate it with tea and a loaf of bread for two. I didn't even have to bake cakes.

Ripe chokeberry is harvested in mid-autumn; it is represented by dark purple round fruits. The scope of its application is very wide: from various preparations for the winter to desserts, dishes and medicines.

The fruits are used frozen, dried, boiled, baked, left to infuse, mixed with other fruits, fruits and much more.

Beneficial features

The popularity of chokeberry, which is actually called chokeberry, which means “help,” owes its popularity to its medicinal properties. Despite the similarity with rowan berries (from which chokeberry got its second name), these are two berries that are dissimilar in their components. The berries are tart, combining sweet and sour flavors. This is why pastry chefs love to use chokeberry to make a variety of desserts. Among ordinary people, chokeberry is only gaining popularity.

The berry, in particular its peel, contains many useful substances, such as:

  • vitamins class P and PP. Vitamin P is ascorbic acid, it is found in all fruits of the citrus family and perfectly strengthens the immune system. PP is nicotinic acid, which is found in some parts of the body and is necessary for normalizing cholesterol in the blood;
  • responsible for the sweet taste sorbitol, which replace sugar in berries, which is not dangerous for people with diabetes. This substance also has a mild laxative property, which will help cleanse the body of harmful toxins;

  • As with all dark berries, chokeberry contains iodine. This substance plays a very important role for the body, as it increases brain activity, reduces stress, makes blood vessels more flexible, and is responsible for the health of hair, teeth, nails, skin and growth;
  • substance pectin is responsible for removing various poisons, even radioactive elements, from the body without disturbing the overall balance;
  • high content potassium, which is responsible for regulating blood pressure, kidney health and much more.

Aronia berries are very rich in substances and useful; in many pharmacies they are sold as a medicine in the form of tinctures, powders, tablets and syrups, which are available without a prescription. It is important to remember that only fresh berries retain a greater amount of active substances.

Chokeberry is used to treat diseases such as:

  • high blood pressure;
  • atherosclerosis;
  • gastritis with zero acidity;
  • tendency to thrombosis;
  • frequent diarrhea.

Eating chokeberry will also help in the prevention of many diseases or to strengthen the body, namely:

  • regulates blood and heart pressure. Scientists have proven that ten chokeberry berries a day can normalize blood pressure in people suffering from high blood pressure, as well as improve vision;
  • strengthens blood vessels, in particular in diabetics. As you know, people suffering from diabetes face complications due to fragile blood vessel walls, which can be strengthened thanks to the beneficial substances of black rowan berries;
  • increases the acidity level of juice in the stomach. Some forms of gastritis are formed when gastric juice has zero acidity (poor absorption of food). Berries normalize the amount of active acid and help cope with stomach pain;
  • removes cholesterol from the body. As you know, the problem of cholesterol mainly affects older people. It can cause atherosclerosis - the accumulation of cholesterol in the joints, which contributes to pain during muscle activity. Aronia berries connect cholesterol cells and remove them from the body;

  • helps with thyroid function due to iodine content;
  • removes toxins. Pectin, as already mentioned, removes all harmful substances from the body, berries, and also helps with accumulated mucous formations in the lungs and throat;
  • the ability to retain water in the body. But for people prone to edema, you should not abuse chokeberry in the evening.

With such a large list of beneficial properties and substances contained, chokeberry still has the following contraindications:

  • low pressure;
  • high level of gastric acidity;
  • gastritis and ulcers, intestinal problems;
  • frequent constipation.

What can you cook?

A huge number of dishes, drinks and infusions can be prepared from chokeberry. Despite the tart taste, chokeberry is a favorite among confectioners and the fruits are often used as a filling for rolls and pies or used to make marshmallows. In addition, chokeberry fruits are added to Lenten dishes.

  • this whole mass is cooked until the drops retain their shape;
  • Once the jam is ready, it is better to close it in jars with an airtight lid.

Everything needs to be mixed in a blender until it becomes a paste. Delicious and healthy jam is ready for tea.

All housewives know the recipe for classic charlotte. In principle, this dessert is universal; it can be prepared using different fruits and berries, and chokeberry is no exception to the rule.

Pie

There is a simple recipe for chokeberry pie called “Skorospelochka” pie. To prepare the dough you will need two glasses of flour, one glass of kefir, yogurt or fermented baked milk (whichever you prefer). Next, add a glass of sugar, chokeberry jam and fresh berries.

Mix thoroughly, then add 2 eggs and a teaspoon of soda, mix thoroughly again. The dough should be left for half an hour to settle. Then it is poured into any form, pre-greased with oil, preferably butter, and baked in the oven for half an hour at a temperature of +180 degrees. The pie is made quickly and turns out very tasty.

If you make cream for the pie and bake two biscuits, then combine them with cream and decorate with fresh chokeberry fruits, you can get a nice homemade cake.

If desired, you can add various seasonings (for example, cloves), lemon zest or other flavors to this tincture.

The classic liqueur has only two ingredients: fruit and sugar. The proportion is three to one (one kilogram of sugar per three kilograms of berries). The berries must first be mashed together with the addition of sugar and made into a puree. Next, you need to add the resulting mixture to a glass container, tie the top with gauze and leave to ferment in a warm place for about an hour and a half. Afterwards, the mixture is filtered and settled in a cool place for three months. Unfortunately, such a tasty liqueur is devoid of the beneficial properties of chokeberry.

Just 200 milliliters of wine drink will help normalize blood pressure, improve intestinal function and have a positive effect on skin condition. It is worth noting that to obtain a richer taste, the number of berries can be increased to 5–6 kg.

To activate the jitters, you can add some brown rice and raisins.

Then the bottle is closed in the form of a lid with a rubber glove, in which a small hole is made at the end of the middle finger of the glove. After 10 days, one glass of sugar and two liters of hot water are added to the container. This procedure is repeated every 10 days until 40 days have passed. The glove will be an indicator of the readiness of the wine; it should not be filled with gases. The filtration process begins, you need to pour the resulting mixture into another container, trying not to touch the sediment, and leave for 2-3 days. When the liquid becomes homogeneous and transparent, the wine is ready to drink.
